Cinnamon Syrup
Take 1 ounce oil of Ceylon cinnamon, rubbed and dried up with carbonate of magnesia in a mortar, SO as pounds; water, 1 gallon; isinglass (best), 1/4 ounce (or, the white of an egg). Dissolve the isinglass in hot water, and add it to the hot syrup. The syrup is to be made with gentle heat, and then strained. to make it a powder; put it in a filter bag, and pour 5 gallons water on it; pour the water over and over till it runs clear; get in this way 5 gallons clear high-flavored water; dissolve 80 pounds of sugar in the flavored 1387.
